If you’ve never had a Pisco Sour and you aren’t allergic to eggs, or delicious cocktails, make one or order one from a bartender you trust. The Pisco Sour is a prime example of the merits of egg whites in a drink, and of how bitters can elevate a cocktail. I’m particularly fond of the¬†meringue like layer of egg whites, on top of which you can perch the bitters of your choice. Our Bitters are perfect for this application since they are dark, and aromatic so that you can enjoy the sight and smell of it while sipping your drink.

combine in shaker, with no ice

2 oz Pisco

1/2 oz fresh lime juice

1/2 oz fresh lemon juice

3/4oz simple syrup

1 egg white

Shake the ingredients briefly, but vigorously with no ice, then add ice and shake again. Garnish the drink with a few drops of bitters on top of the nice pillowy foam on top, then drag a toothpick through them to make it pretty. Enjoy!
